A Taste of the Season: Holiday Dishes at Lake House

Published on December 12, 2025

December transforms Caldera Springs into a true holiday escape. Snow-dusted trails, glowing fireplaces, and festive gatherings set the tone — but it’s the seasonal dining that brings everyone together. Lake House is at the heart of it all, offering comforting dishes, scenic views, and a warm place to settle in this winter. Let’s dig into what’s on Chef Krista Matheis’ menu this holiday season.

Seasonal Starters

Our new winter menu spotlights starters that make the most of fresh, local ingredients. Begin with the skillet brie, served warm with a spiced pear marmalade and apple, or savor the richness of our butternut squash bisque. For something brighter, the winter beet salad comes alive with orange, feta, and pistachio, while the harvest salad brings together dried cranberries, roasted butternut squash, and Oregon bleu cheese. Each dish perfectly captures the flavors and colors of the holidays.

Cozy Winter Entrées

As the evening continues, heartier dishes take center stage. The winter pappardelle blends wild mushrooms, caramelized onion, roasted butternut squash, charred tomato, and a dijon-tarragon cream, creating a comforting nod to the season. The bone-in pork chop delivers its own winter warmth with charred onion polenta, cider-roasted rainbow carrots, and spiced apple chutney. These entrées balance bold flavors with thoughtful, seasonal accents — exactly what winter dining should feel like.

Festive Cocktails

The bar at Lake House likewise leans into the season. Our Mt. Bachelor Cocoa brings together hot chocolate, Luxardo Del Santo, whipped cream, and petite marshmallows for a holiday treat. The Harvest Toddy offers a warm blend of hot apple cider, lemon, and cinnamon. And the Autumn Caipirinha adds a festive twist with pomegranate syrup, allspice dram, and lime. Whether enjoyed before dinner or beside the outdoor fire pit, these drinks capture the heart of winter.

Christmas Dinner at Lake House

For Christmas, Lake House serves a family-style feast designed around the flavors and traditions of the season. From warm baked brie paired with spiced apple marmalade to crispy brussels sprouts, creamy mashed potatoes, prime rib, and herb butter-roasted turkey, Chef Matheis’ menu is the holiday season personified. Finish it off with an assortment of mini apple, cherry, and pumpkin pies and you have the perfect family feast.
